(Six to Eight 4″ Pancakes)
- 1/2 cup “JIFFY” Buttermilk Pancake & Waffle Mix
- 1 Tbsp. margarine or butter
- 1 cup instant mashed potatoes
- 1 egg
- 3/4 cup milk
- 1/2 cup cheddar cheese, shredded
- 1/4 tsp. salt
- 1/4 tsp. pepper
Preheat griddle or skillet over medium heat (350°F to 375°F). Melt margarine or butter on griddle/skillet.
Combine remaining ingredients until moist.
Drop batter by tablespoon onto griddle/skillet; flatten slightly.
Cook until lightly browned on each side.
