Mint Brownies

(24 – 30 Brownies)

Ingredients:

Brownie

  • 3 pkgs. “JIFFY” Fudge Brownie Mix
  • 3 eggs
  • 3 Tbsp. water
  • 6 Tbsp. oil
  • 1 pkg. (10 oz) creme de menthe baking chips, divided

Frosting

  • 3 cups powdered sugar
  • 4 oz cream cheese, softened
  • 1/2 Tbsp. milk
  • green food coloring (optional)

Fudge Brownie Mix

Directions:

Preheat oven to 350°F. Grease a 13” x 9” pan.

Prepare brownie mixes as directed on packages.  Add 1/2 cup of mint chips.  Mix well.  Bake 30 – 35 minutes.  Cool completely.  Beat cream cheese until smooth.  Add powdered sugar.  Blend well.  (If mixture is too thick, add milk.)  Blend in food coloring (optional).  Spread over brownies.  Let stand 30 minutes for frosting to slightly harden.  In double boiler, melt remaining mint chips, over low heat, until almost melted.  Remove from heat and stir until completely melted.  Drizzle over frosting and chill to set.
