Golden Yellow Cake Mix Recipe

Apple Crisp

(12 – 15 Servings)

Ingredients:

  • 2 pkgs. “JIFFY” Golden Yellow Cake Mix
  • 2-3/4 cups Granny Smith Apples, cored and sliced
  • 1/2 cup sugar
  • 2 Tbsp. cinnamon
  • 1/2 cup margarine or butter
  • 1 cup chopped nuts

Golden Yellow Cake Mix

Directions:

Preheat oven to 350°F.

Arrange apples in bottom of an ungreased 13” x 9” pan. Combine sugar and cinnamon. Sprinkle over apples. Combine cake mix, margarine or butter and nuts. Blend well. Spread over apple mixture. Bake 45 – 50 minutes or until apples are tender. Serve warm with ice cream or whipped topping (optional).

Blueberry Buckle

Blueberry Buckle

(9 – 12 servings)

Ingredients:

Cake

  • 2 cups “JIFFY” Baking Mix
  • 1-3/4 cups fresh or frozen blueberries
  • 1 can (14 oz.) sweetened condensed milk
  • 1 tsp. lemon zest
  • 3/4 cup margarine or butter

Topping

  • 1/2 cup “JIFFY” Baking Mix
  • 1/2 cup brown sugar, firmly packed
  • 2 Tbsp. margarine or butter
  • 1/2 cup nuts, chopped

Directions:

Preheat oven to 325°F. Grease a 9” pan.

For cake, combine blueberries, milk and lemon zest. In separate bowl, cut margarine or butter into baking mix until crumbly. Stir in blueberry mixture. Spread into pan. For topping, combine baking mix and brown sugar. Cut in margarine or butter until crumbly. Add nuts. Sprinkle over blueberry mixture. Bake 65 – 70 minutes or until lightly browned. Serve warm with whipped cream or ice cream (optional).

Cherry Apricot Cobbler

(8 – 10 Servings)

Ingredients:

Fruit Mixture

  • 1 can (15.25 oz.) apricots, drained
  • 2 cans (14-1/2 oz.) cherries, drained
  • 1/2 cup sugar
  • 2 Tbsp. tapioca

Crumb Mixture

  • 1 pkg. “JIFFY” Vegetarian Corn Muffin Mix or
    1 pkg. “JIFFY” Corn Muffin Mix
  • 1/2 tsp. orange peel
  • 4 Tbsp. margarine or butter, softened
  • 1/2 cup milk
  • 3 Tbsp. sugar

Vegetarian Corn Muffin Mix
Corn Muffin Mix

Directions:

Preheat oven to 375°F. Grease a 9″ baking pan.

Combine fruit mixture ingredients and set aside. For crumb mixture, combine muffin mix, orange peel and margarine or butter with fork until crumbly. Stir in milk just until moistened. Pour fruit mixture into pan. Sprinkle crumb mixture over fruit. Sprinkle remaining sugar over top. Bake 35 – 40 minutes.

  • 3/4 cup brown sugar, firmly packed

Apple Cinnamon Muffin Mix

Directions:

Preheat oven to 350°F.

Grease a 13” x 9” baking pan.  Combine apples, sugar and cinnamon.  Mix to coat and place in pan.  Combine muffin mix, oats and brown sugar.  Cut in margarine or butter until crumbly.  Sprinkle on top of apples.  Bake 40 – 45 minutes.

Directions:

Preheat oven to 350°F.  Select your favorite pie filling and spread into an ungreased 8” square pan.  Combine cake mix and nuts (optional).  Cut in margarine or butter until crumbly.  Sprinkle over top of pie filling.  Bake 45 – 50 minutes.

Variation:  Substitute “JIFFY” White Cake Mix in place of “JIFFY” Golden Yellow Cake Mix.

Pumpkin Pecan Cobbler

(6 – 9 Servings)

Ingredients:

Batter

  • 1-1/4 cups “JIFFY” Baking Mix
  • 3/4 cup sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1/2 cup pumpkin
  • 1/4 cup milk
  • 1/4 cup margarine or butter, melted
  • 1-1/2 tsp. vanilla extract

Topping

  • 1/2 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup pecans, chopped
  • 1-1/2 cups very hot water

Directions:

Preheat oven to 350°F.

For batter, combine baking mix, sugar and spices.  Set aside.  Combine pumpkin, milk, butter and vanilla.  Pour into dry mixture.  Mix until combined.  Spread into ungreased 8” baking pan.  For topping, combine sugars and pecans.  Sprinkle over batter.  Pour hot water over mixture.  Do not stir.  Place on baking sheet.  Bake 44 – 47 minutes or until center is set. Cool 5 – 10 minutes.  Serve with whipped topping or ice cream (optional).

Baking Mix Recipe

Fruit Cobbler

(4 – 6 Servings)

Ingredients:

  • 1-1/2 cups “JIFFY” Baking Mix
  • 4 cups apples, peeled and sliced
  • 3/4 cup sugar
  • 1 tsp. cinnamon or nutmeg
  • 1/2 cup milk
  • 1 egg
  • 3 Tbsp. shortening, melted

Directions:

Preheat oven to 400°F.  Grease well a 1 quart baking dish. 

Combine apples, sugar and cinnamon or nutmeg.  Pour into dish.  Mix remaining ingredients until blended. Drop by tablespoon onto fruit.  Bake 15 minutes;  reduce heat to 350°F and bake an additional 10 minutes or until fruit is tender.
