Buttermilk Pancake and Waffle Mix Recipe

Cheesy Potato Pancakes

(Six to Eight 4" Pancakes)

Ingredients:

  • 1/2 cup “JIFFY” Buttermilk Pancake & Waffle Mix
  • 1 Tbsp. margarine or butter
  • 1 cup instant mashed potatoes
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup cheddar cheese, shredded
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions:

Preheat griddle or skillet over medium heat (350°F to 375°F).  Melt margarine or butter on griddle/skillet.

  • 1 pkg “JIFFY” Fudge Brownie Mix
  • 1 Tbsp. water
  • 2 Tbsp. oil

Fudge Brownie Mix

Directions:

Preheat oven to 350°F.  Grease a 9” square pan. Combine crust ingredients.  Spread into pan.  For filling, blend cream cheese, sugar and vanilla until creamy.  Add eggs.  Mix well.  Pour over crust.  Sprinkle with chocolate chips.  Bake 40 – 45 minutes.  Cool before cutting.

Ingredients:

  • 1 pkg. “JIFFY” Pizza Crust Mix
  • 1/2 cup warm water (80°F to 90°F)
  • Assorted toppings (prepare and set aside)

Pizza Crust Mix

Directions:

Preheat oven to 425°F.

BLEND pizza crust mix and water to a soft dough.

COVER and let stand for 5 minutes in a warm place.

KNEAD several times on a floured surface.

GREASE 12″ or 14″ pan. Grease fingers and press dough on bottom and sides of pan. Dough may be shaped into a 14″ x 10″ rectangle on greased baking sheet.

PRE-BAKE crust for 2 – 3 minutes before adding your favorite toppings. Drain meat and other toppings before putting on crust.

BAKE 18 – 20 minutes or until crust is lightly browned.

Suggested Sauce: Add 1/2 teaspoon oregano and 1/2 teaspoon garlic powder to an 8 oz can of tomato sauce. Mix well. Spread on pre-baked crust before adding toppings.

Chicken Casserole with Broccoli

(6 – 8 Servings)

Ingredients:

  • 1 cup “JIFFY” Baking Mix
  • 1-1/2 cups pre-cooked chicken, chopped or 2 cans (4.5 oz) chunk chicken, drained
  • 1 pkg. (10 oz) frozen broccoli, chopped (rinsed and drained)
  • 1-1/2 cups cheddar cheese, shredded or 1-1/2 cups fresh broccoli
  • 3 eggs
  • 1 cup milk
  • 1/4 tsp. seasoned salt
  • 1/4 tsp. pepper

Directions:

PREHEAT oven to 400°F.  Grease a 2 quart casserole dish or a 9” square baking pan.

PLACE chicken, broccoli and cheese into prepared dish or pan.

BLEND baking mix, eggs, milk, salt and pepper in separate bowl.

POUR over chicken, broccoli and cheese.

BAKE for 35 – 40 minutes or until knife inserted in center comes out clean. Let cool 5 minutes before serving.

Directions:

Ingredients:

  • 2 cups “JIFFY” Baking Mix
  • 3 oz cream cheese, softened
  • 2 Tbsp. sugar
  • 1/2 cup milk
  • 1/4 cup margarine or butter, softened
  • 2 tsp. cinnamon
  • 1/3 cup sugar
  • 1/4 cup corn syrup

Directions:

Preheat oven to 425°F. 

Grease an 8” square pan.  Blend baking mix, cream cheese and 2 tablespoons sugar until crumbly.  Add milk to form soft dough.  On floured surface, knead 2 – 3 times.  Roll or pat out to 15” x 8” rectangle.  Spread with margarine or butter.  Sprinkle cinnamon and sugar on top.  Drizzle with corn syrup.  Roll up and slice.  Place in pan.  Bake 15 – 20 minutes.

  • 3 Tbsp. quick-cooking tapioca

Pie Crust Mix

Directions:

Preheat oven to 425°F.  Combine cherries, sugar, tapioca and almond extract.  Let set for 15 minutes.  Prepare pie crust as directed on package for a two crust pie.  Dot filling with margarine or butter.  Cover with top crust, seal edges and slit top for venting.  Bake 15 minutes. Reduce heat to 375°F and bake an additional 35 minutes.

Preheat oven to 350°F.  Grease an 8” square pan.  Combine first four ingredients.  Mix with fork until crumbly.  Reserve a 1/4 cup.  Press remaining crumb mixture in bottom of pan.  Spread jam or preserves on top.  Sprinkle reserved crumb mixture over top.  Bake 24 – 28 minutes or until lightly browned.  Cool and cut.

TURN dough onto lightly floured surface, knead 2 – 3 times.

ROLL or pat out to 1/2” thick. 

CUT with 2-1/2” floured cutter and place on ungreased baking sheet. 

BAKE 10 – 12 minutes

Buttermilk Pancake & Waffle Mix

Directions:

PANCAKES MIX WATER*
2 – 3 1/2 cup 1/4 cup
5 – 6 1 cup 1/2 cup
11 – 12 2 cups 1 cup
19 – 20 3 cups 1-1/2 cups

*If desired, milk may be substituted for water.

PREHEAT griddle or skillet over medium heat (350ºF to 375ºF) or as manufacturer directs.  Griddle/skillet is ready when a few drops of water sizzle and disappear.  Grease lightly. 

COMBINE ingredients. 

STIR until large lumps disappear (about 15 seconds). 

POUR 1/4 cup of batter for each pancake onto griddle/skillet.  When pancake bubbles around edge turn.  Pancake is done when bottom is lightly browned.

Directions:

Golden Yellow Cake Mix

Directions:

Preheat oven to 350ºF.  Grease, flour and line bottom of pan with parchment or wax paper.

Blend cake mix, egg and water for 30 seconds.

Beat 3 – 4 minutes on medium.  (Hand mix for 5 – 6 minutes.)

Bake 8″ round pan 25 – 30 minutes
          9″ round pan 20 – 25 minutes
          8″ square pan 20 – 25 minutes
          Cupcakes:  fill cups 1/2 full, bake 15 – 20 minutes

Cake is done when a toothpick inserted in center comes out clean.  Cool 10 minutes, remove from pan.

HIGH ALTITUDES (above 3,500 ft.)  Stir 1-1/2 tablespoons flour into mix.  Add 1-1/2 tablespoons more water and mix as directed.  Increase baking temperature to 375ºF.

Directions:

Preheat oven to 350°F. Grease a 13” x 9” pan. In saucepan, combine first four casserole ingredients. Simmer 20 minutes.  Combine cooked vegetables with remaining casserole ingredients.  Mix well.  Pour into pan.  For topping, combine first five ingredients. Add 1 cup of cheese. Blend well. Drop by tablespoon on vegetables. Bake 40 – 45 minutes.  Sprinkle remaining cheese on top. Return to oven until melted.

Directions:

Preheat oven to 375°F. Grease baking sheet.  Combine pizza crust mix, seasoning, pepperoni and mozzarella cheese. Add water and mix well. Spread Parmesan cheese on flat surface; knead dough into cheese. Roll to 1/2″ thick; cut into 1″ bread sticks. Place 1” apart on baking sheet. Bake 18 – 20 minutes. Mix together coating ingredients. After removing sticks from oven, brush tops with coating.
